When leaves on a plant start to turn yellow, does that mean that the plant is being watered too much AND, when leaves are starting to look "droopy", I would think that's a signal that it's time to water. Am I correct? THANKS for your help.

It can mean either one. The best way to tell if a plant is too wet or too dry is to put your finger on the soil and see how it feels. If that doesn't help, take the plant out of the pot and see if it is wet or dry or potbound with lots of roots showing. If it has outgrown the pot you need to get a larger pot and add more soil so the roots will be able to grow.
